Tropical Rambutan Smoothie

Oct 1, 2012 · by Valentina · 7 Comments

There aren't too many recipes with rambutans, but they're the star of this Tropical Rambutan Smoothie, which also includes banana and pineapple. It's perfect for a warm summer day!Tropical Smoothie in a tall glass with rambutan and pineapple on rim

I think smoothies are a great way to start the day for breakfast, and I also love them for a refreshing afternoon snack.

This Tropical Rambutan Smoothie is one of my favorites!

What's in a Tropical Rambutan Smoothie?

  • yogurt
  • rambutans
  • banana
  • pineapple
  • honey
  • vanilla
  • ice

All of these sweet and tangy flavors mixed together in a creamy smoothie are incredible.

What is a rambutan?

It’s a very beautiful and unique looking fruit that’s closely related to a lychee. While its delicious sweet taste is similar to that of a lychee, it’s slightly firmer in texture and a bit less sweet — though still quite sweet!

This tropical smoothie is not only a great breakfast or snack, but it's also a fantastic reward after a workout.

I also love this Rambutan Cocktail (below).

Hopefully my rambutan smoothie will be one of your go-to recipes with rambutans. (Or, maybe you'll go for the cocktail. 😉 )

Recipe Tip

You can use lychee fruit if you can't get rambutans. And for either one, you can use canned, if you can't find fresh. If you do, drain them from any syrup that they might be canned with, before adding them to the blender.

Enjoy!

Tropical Rambutan Smoothie Recipe

There aren't too many recipes with rambutans, but they're the star of this tropical smoothie recipe, which also includes banana and pineapple. It's perfect for a warm summer day!

  • ⅓ cup plain low-fat yogurt
  • 5 rambutans or lychees, peeled and pitted (here's how to peel and pit them)
  • 1 medium-sized ripe banana
  • ⅓ cup pineapple chunks
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • ½ cup crushed ice
  1. Add all of the ingredients to a powerful blender and purée until it's smooth.

  2. Serve!

You can also use canned lychee or rambutan -- if you do, drain them from any syrup that they might be canned with, before adding them to the blender.

I haven't had rambutans since I was in Thailand but this might make me actually go to the store for the ingredients. If it wasn't so blisteringly hot! Lovely photo too!

I am making this tomorrow, but, with pineapple guava. Why not? They are falling off the tree. Thanks for a great idea! - Kaye
