Chorizo Enchilado Melt

This Chorizo Enchilado Melt recipe combines the delicious smoky and earthy chorizo with the creamy, melting Enchilado cheese. It's out of this world!

Inspiration for Chorizo Enchilado Melt

One of the reasons I welcome cooler weather is because it’s the perfect time to serve cozy comfort food meals. And one-pot stews, melting cheese and crusty bread all mean comfort food!

In this recipe I was inspired by two of my favorites: beef chorizo and Enchilado cheese. Simple as that. I knew it would be an incredible pairing.

What is Enchilado cheese?

Enchilado is a delicious, strongly flavored cheese with hints of paprika. It melts beautifully making it perfect for quesadillas, nachos, grilled cheese, and today, the melt. Despite the spicy appearance and name, Enchilado cheese does not have much heat.

What do they taste like together?

The spicy zest and earthiness of the chorizo sitting beneath the creamy, melting Enchilado with its hints of paprika, is out of this world.

When to serve Chorizo Enchilado Melt

This is a fantastic comfort food meal for dinner or for a relaxed weekend lunch. The whole family should love it.  While the chorizo is spicy enough for those who enjoy a bit of  heat, it's not so spicy that kids won't love it, too.
