Watermelon Pizza with Lime

This watermelon pizza with lime is a beautiful, refreshing, and super delicious summer dish! A lighter version than most, the lime flavor puts this one over the top.

This Watermelon Pizza recipe is a work of art, and it's so much fun!

This recipe is unique in that it's a lighter version than most watermelon pizzas -- most have a cream cheese frosting or a whipped cream layer of some sort. (Which is delicious, just not light.)

It's also a very refreshing, healthy dessert, making it ideal for summertime.

Ingredients for Watermelon Pizza


  • mini seedless watermelon
  • strawberries
  • blueberries
  • lime juice
  • Feta cheese
  • thyme
  • black pepper

How to Make it


- Cut a thick round slice of a mini seedless watermelon into six slices, just as you would a pie.

- Drizzle the watermelon wedges with lime juice and add all of the toppings: strawberries, blueberries, Feta and thyme.

- Add a few turns of black pepper, and drizzle it with a bit more lime juice.

Recipe Tips and Substitutions


  • It's really fun to use finger limes (pictured in the images on top of the watermelon slices). You can get them here. And sometimes they show up in the specialty section of some produce departments at grocery stores.
  • For the size we're going for, cut through the center of the watermelon (horizontally).
  • This recipe uses a mini watermelon, but you can make this with any size, just add to the amount of the other ingredients. And to make more than two servings (one round), cut as many thick rounds as you'd like, and again, adjust the other ingredients accordingly.
  • You might also like to try this recipe with fresh basil or mint leaves.
  • If you want to substitute the Feta, a blue cheese or Cotija would be lovely. (The blue cheese would have a stronger flavor, but all of them have a saltiness that's a perfect to balance the sweet and juicy watermelon.
  • This would also be pretty with a yellow watermelon.
  • For another fun way to change it up, add a few very thin slices or red onion. The slightly sharp taste can be a nice contrast to the natural sweetness of the fruit.
  • It's hard not to when they're in season, but be sure to choose a ripe watermelon. (Here are six great ways to tell is a watermelon is ripe.)

Serving Suggestions


  • This is such an easy summer dessert that's perfect for a barbecue. It's excellent alongside grilled steak, and all sorts of grilled vegetables.
  • Of course it's also lovely after a meal for a beautiful fresh fruit dessert. (We all love a no bake dessert when it's a hot day!)
  • It's a delicious way to serve a healthy breakfast, and it would be a pretty centerpiece on your brunch table.

Watermelon Pizza Recipe

This raw watermelon pizza with lime is a beautiful, refreshing, and super delicious summer dish! The lime flavor puts it over the top!

  • 1 thick slice of a mini, seedless watermelon (about 5-inch diameter)
  • 1 tablespoon lime juice*
  • 2 small strawberries, (washed and dried, thinly sliced)
  • about 1 dozen blueberries (washed & dried)
  • about 2 teaspoons crumbled Feta cheese

Garnishes

  • a few slices of lime
  • ½ teaspoon finely chopped fresh thyme, plus a few sprigs (washed and dried)
  • freshly ground black pepper
  1. Prep watermelon. To cut the thick round from the mini watermelon, use a very sharp Chef's knife to slice it slowly, holding it carefully on a dry surface. For the size we're going for, a center cut is best. Cut the watermelon horizontally, into 6 slices, like a pie, and place them on a large plate

  2. Assemble. Drizzle about half of the lime juice over the watermelon slices, and then arrange the strawberries and blueberries on top, any way you'd like to. Add the crumbled Feta evenly.

  3. Garnish and serve. Sprinkle with the finely chopped thyme and add the thyme sprigs, lime slices and a few turns of black pepper. Then drizzle with the remaining lime juice. Serve cold.

    This is absolutely art.
    I love your photography. I'm glad you found your niche, where you belong in the art world.
    I remember when I was a chef and making beautiful food wondering how I could capture that forever, then I started really getting into photography. It's like the photos are my minds eye, my creativity.
    I have seen similar recipes to this, but I feel like the blueberries and lime put it over the rest! Seems perfect for summer!
