Dover Sole Recipe with Chimichurri

Since learning from my new favorite cookbook, 50 Best Plants on the Planet, that cilantro is one of the top five most nutrient dense vegetables on the planet, I love it even more!

Cilantro is definitely a love it or hate it flavor. And there's actually good reason for that. You can read all about it here.

I'm very much hoping though, that you're here -- visiting this recipe -- because you love it.

I love making a lot of Cilantro Chimichurri at once, so I have it on hand for recipes like this.

Doesn't it look so delicious!? And just wait until it hits the fish.

It's a fabulous combination.

What's in this recipe?

It's essentially two ingredients: the sole and the Cilantro Chimichurri.

Let's break it down a bit more to see what's in the Chimichurri:

  • cilantro
  • garlic
  • red wine vinegar
  • olive oil
  • lemon juice
  • cumin, paprika, crushed red pepper and salt

I love it on so many different foods.

I mixed it into brown rice, slathered it on a crusty slice of rustic bread, added it to a vegetable stir-fry, and marinated fish in it.

How to Broil Dover Sole

It's so easy and so quick!

  1. Preheat the broiler and prepare the fish on a baking sheet.
  2. Place the baking sheet under the broiler just until the fish is cooked through, 3 to 4 minutes.

That's it!

This is such a quick and easy main course, but when you make this at your next weekend dinner party, your guests will assume it took hours and be very impressed. Trust me! 😉

Dover Sole Recipe wtih Chimichurri

This Dover Sole Recipe with Chimichurri is broiled to perfection and is exploding with fresh and tangy flavors. Easy for a busy weeknight and lovely for a weekend dinner party. 

  • 1½ pounds Dover Sole fillets, (portioned into approximately 4 (6-ounce) pieces)
  • ¾ cup Cilantro Chimichurri (click here for the recipe)
  • salt and freshly ground black pepper
  1. Add the Cilantro Chimichurri to a shallow baking dish or a heavy-duty zip-lock bag.

  2. Add the Sole fillets and make sure both sides are well coated.
  3. Let the fish marinate for at least 30 minutes, and up to 1 hour.
  4. Preheat the broiler, place the marinated fish fillets on a baking sheet, and sprinkle them lightly with salt and pepper.
  5. Place the baking sheet under the broiler just until the fish is cooked through, 3 to 4 minutes.

    I took the fish marinade suggestion and made this tonight. I marinated tilapia and sauteed it - quick and delicious!
