Best Hatch Chile Recipes

What is special about Hatch Chiles?


Hatch chile season should be taken advantage of because it's only about 6 weeks long. Several years ago, Melissa's Produce introduced me to Hatch Chiles and I've been creating Hatch Chile recipes ever since.

Hatch chiles are a prized chile and are only available in August and September. 

Where are Hatch Chiles Grown?


These Southwestern chiles are grown in the Mesilla Valley in New Mexico. The sunlight is intense and and the nights are cool.  It’s this climate combination that creates wonderful earthy flavored, subtly sweet, delicious mild or hot Hatch chiles.

How hot are they?


Two bags of labeled Hatch Chiles - one HOT and one MILD.Ranging from very mild, to very hot, Hatch Chiles are one of the few chiles where hot and mild can be determined, even though they all look the same.

They should be labeled as such in stores — if they’re not, I’d ask the produce department if they know, and if they don’t, ask them to cut into one for you. They can be very, very hot — or not at all.

And if you're really lucky, there will be a Hatch Chile Roasting near you. At the roastings, you can get a huge box of the chiles and they'll roast them for you on the spot. 

This is particularly awesome because the roasted peppers freeze beautifully -- so you can make Hatch Chile recipes all year long.

    HATCH CHILES! HATCH CHILES! YUM YUM YUM!!! (I sang that btw). I bought a 30lb bag last year and it didnt last long. This year I will buy 2 because I want some of those tostadas and skillet cornbread. Um and maybe some of that butter with the zucchini bread. You make me hungry!

    I have made several of these and now see a few more that I must try! The rolled sole, for example (with the bacon!). Last year I ordered Hatch chiles to he delivered only to find them fresh at our market. This year I will check the market first! Thanks for the wonderful recipes (and gorgeous photos!) ~ David

    Absolutely great ! I usually roast bell peppers ( all colours available )and make all sorts of dishes with them but this round up is completely new universe for me. Keeper and another ingredient on my list for tomorrow's street market 🙂 🙂

    You are always my go-to source for the best Hatch chile recipes! So funny - yesterday I was in the Safeway and there was a box of Hatch chiles. I immediately thought of you! Time for some spicy fun in the kitchen!

    I would love to go a Hatch chile roasting! Hatch chilies aren't terribly easy to find up here in the northeast, but I get to live vicariously through you. These recipes sound phenomenal...especially that cornbread! 🙂

    We love Hatch chilies, Valentina! Though I did once make the mistake of buying the ‘hot’ ones and WOW, they can be blistering. But (for my taste) the mild to medium are heavenly.

    I’m so intrigued by the Mahi Mahi stuffed chilies. So pretty and they sound wonderful!

    I am also a chile pepper lover, and just spent a few days in Albuquerque, New Mexico, heart of hatch chile peppers. Every morning I’d start my day with huevos rancheros, with the green chile sauce. To die for. I love all of your recipes - am very intrigued by the hatch chile pepper and peach salsa! I have a peach salsa but it’s a cooked variety.
